Am sure most of you would like to try this lentil dosa made purely out of one of the most nutritious of all the lentils, the Yellow Moong Dal!!

Ingredients to make 12-15 Dosas
1 Cup Yellow Moong Dal
2 Small Red Chillies
1 Green Chilli
1 Small Onion (Finely chopped)
½ Tsp Asafoetida Powder
½ Tsp Turmeric Powder
1-2 Tsp Salt
Few Curry Leaves
Finely Chopped Coriander Leaves
¼ Cup Oil (for shallow frying)
Preparation
Soak the dal for 2-3 hours
Drain the water
Add the chillies, asafoetida powder, turmeric powder and salt
Pour in enough water to grind it into a slightly grainy thick semi solid batter
Pinch the curry leaves and add the finely chopped onion with the coriander leaves
The dosa batter is ready to be used
Place a flat heavy based pan on the stove on high till the pan is heated.
Reduce the flame a bit and the pan is ready for making the dosa
Scoop a ladle of the batter and pour it in the centre and gently but quickly spread the batter starting at the centre and making your way around filling the batter on the entire pan.
Add a teaspoon or two of oil around the dosa
The dosa is ready to be gently tflipped on the other side when it turns golden brown on the bottom
Use a flat ladle and work your way through by lifting the corners –
The dosa is ready when is it is light brown at the top
