Pori (Puffed Rice) Urundai (Ball)

This sweet treat is generally prepared in the auspicious months of November or December in Tamil Nadu.
It is prepared with puffed rice and jaggery. Quick, tasty and easy recipe prepared in less than 15 minutes.  On this festive day, lamps are lit in front of the house which gives a festive atmosphere!!

Ingredients to make approximately 10-12

2-3  Cups Puffed Rice
1 Cup Powdered Jaggery
1 Cup of Water
1 Tsp Cardomom Powder
1/4 Tsp Ginger Powder

Preparation

Dry roast the puffed rice for a couple of minutes and keep aside
In a pan, bring the cup of water to the boil
Add the powdered jaggery and stir the mixture for a few minutes to make a syrup.
(To check if the syrup has reached the right consistency, add a few drops of the jaggery syrup into a bowl of water and gently swirl it with your fingers – you should be able to pick it up with your forefinger and thumb)
Pour the jaggery syrup little by little on to the roasted puffed rice, swiftly stirring the mixture through.
Enough syrup has been added when the puffed rice has been covered lightly with the syrup
Sprinkle the cardamom and ginger powder and immediately make it into orange sized balls

This sweet festive treat is ready to be served!

Note: To make the balls, rub some rice flour on both hands, pick up the puffed rice and jaggery mix and gently roll it in the palms of your hands to make it into a ball.
