Instant Rava (Semolina) Idli

Have you run out of ideas or would simply like an instant dish without much preparation?
This fluffy healthy tasty Idli is less messy to prepare as no grinding or fermentation is required
This Semolina or Rava or Sooji Idli  is a quick, stress-free and delicious dish!
All you need in your pantry is coarse semolina, salt and yoghurt!!!

Ingredients

1 cup Coarse Semolina
2 Cups Yoghurt
Water (enough to mix into a semi solid batter)

Seasoning

2 Tbs Oil
1 Tsp Mustard Seeds
1 Tbs Channa Dal
1 Tbs Urad Dal
1-2 chopped Green Chillies
Few broken Cashew nuts
A pinch of Asafoetida Powder
Few Sprigs of Curry leaves

Preparation

Mix the semolina and the yoghurt thoroughly in a large bowl with the salt and set aside
Heat the oil and add the mustard seeds
When the seeds crackle, add all the ingredients ear marked for seasoning.
When the dals and cashew nuts turn slightly golden brown, pour it into the semolina and yoghurt mix.
Stir the entire Rava Idli mix and it is ready to be added into the Idli moulds.

Grease the mould with a drop of oil in each mould
(optional  if you are using a non stick mould you generally do not have to grease it)
Scoop a ladle of the batter and pour just enough into each mould
Steam it for about 6 minutes on high in the pressure cooker without placing the weight.
Reduce the flame and steam it for another minute.
Open the pressure cooker after a couple of minutes
Scoop the Idlis out gently with a spoon.

Baking Soda may be used but my preference is to use Yoghurt instead which does the same job and easier on the stomach!!!

Serve it with any hot Sambhar, Chutney powder or any Chutney!!
