Bottle Gourd or Lauki or Doodhi as it is known in some parts of India or Sorraikai as it is known in Tamil, has numerous health benefits – It has loads of vitamins and minerals essential for the body.
It is high in Calcium, Magnesium, Vitamin A, C and Folate.
It helps reduce blood pressure and promotes weight loss.
It also prevents fatigue and very low in fat and cholesterol as it contains 96% water – it helps balance liver function and aids in processing food efficiently for nutrition and assimilation!
This simple recipe is prepared by using the humble veggie and enhancing it with some spices!
Tastes delicious and can be served with rotis naans or rice!!
Ingredients to serve 6 people
2 cups of Peeled and Chopped Bottle Gourd (into small cubes)
1 Medium Sized Onion
1 Large Tomato
50-100 grams Tomato Paste
1 Tsp of Cumin Seeds
1-2 Green Chillies (finely chopped)
2 Cloves Peeled Garlic (finely chopped)
1 Pinch of Turmeric Powder
1 Inch Piece Fresh Ginger (finely chopped or grated )
1-2 Tsp Garam masala Powder
1 Tsp Red Chilli Powder
1-2 Tsp Salt
2 Tbs Oil
Preparation
In a pot or pan add the chopped veggie with half a cup of water directly on the stove for 5 minutes or till it is cooked – this veggie cooks in minutes!
In the meantime, heat the oil in the pan and add the cumin seeds and turmeric powder
The chopped onion, ginger, green chillies and garlic can be added immediately and fried till the onion is glassy and soft
Stir in the chopped tomatoes, tomato paste and sauté for a couple of minutes
Add the veggie
Cook on a low flame for 4-5 minutes
Add the garam masala, red chilli powder and salt
Garnish it with chopped fresh coriander leaves
Note:.This dish tastes delicious with Puris, Chapatis, Naans and Plain Rice.
