I am sure there are people like me who purchase a carton of fresh cream and (consciously )use a few tablespoons of it to prepare a dish say a sabji. The remainder of the fresh cream will be sitting in the firdge eagerly awaiting to be used before the expiry date!!
Well this simple and tasty sweet treat prepared under 10 minutes in the microwave oven will make you grab the fresh cream – the measurement used below will make approximately 20 pieces!! so you can share the pieces of this amazingly tasty burfi, without feeling guilty about the contents that you have used!!!
2 Cups Skim Milk Powder (available in super markets)
½ Cup Sugar
200 ml Fresh Cream (available in super markets)
¼ Cup Sliced Pistachio nuts
1 Tsp. Cardamom powder
2 drops Rose/Vanilla or Pistachio essence
few strands Saffron
Preparation
Mix the skim milk cream powder, sugar and fresh cream thoroughly in a bowl and place it in a large microwave dish
Cook it on high for 2 minutes.
Open the Microwave and stir the mixture and cook it for a further 2 minutes stopping and stirring the mixture after a minute.
When the mixture begins to boil, stop the microwave, add the nuts, saffron, essence and cardamom powder
Mix it thoroughly.
Microwave the mixture for a few more minutes (atleast 5 minutes, stopping and stirring from time to time)
The burfi is ready when the mixture starts to have a crumbled, solidified look and texture.
Pour it into an already lightly greased (with a bit of butter or ghee) dish
Let it set for a while outside or in the fridge for about 10 minutes
Cut it into diamond shaped or square pieces.
It is ready to be served.
Wow – This I have to try because I have had this before and absolutely love it…And since I will be using ‘skim’ milk powder (like you suggested), I will be pretending it is very good for my overall health and will munch a lot on it…
